Espresso coffee, the most popular beverage in italy, is a thick, bittersweet elixir made by pressing 7.5 gram (0.26 oz) layer of ground coffee beans, and allowing a jet of hot water at 90°C (195°F) passes with a pressure of 15 or more atmospheres through it. The typical serving size of espresso coffee in Italy is half espresso cup, 30 ml (1 oz), but it contains a more concentrated amount of caffeine than a standard American coffee. Cultivation of Coffee
The coffee plant grows in hot climate countries, and flowers bloom after the plentiful rainfalls. The fruit develops over the course of 8/9 months in the form of a red berry similar to a cherry. Seeds are coffee beans that are green and become brown after long harvesting and drying. The harvesting is carried out by picking the berries, one by one by hand, taking only the mature ones.
The coffee plant belongs to the Rubiaceae family, of the Coffea genre. There are many species, but only 2 species are extensively cultivated:
- Arabica is the most widespread and finest, grows at altitudes over 900 meters, with elongated bean with a sinuous groove and a caffeine content between 0.9% and 1.7%. The Arabica production is mainly in Brazil, Colombia and Peru, Mexico and Panama. Arabica ensures an aromatic coffee, with a sweet full taste and pleasant acidic touch.
- Robusta grows in lower plains with a tropical climate, with rounded bean with a straight groove and a caffeine content between 1.6% and 2.8%. The Robusta production is mainly in Ghana, Cote d’Ivoire, Ethiopia, Vietnam and Indonesia. Robusta ensures a full bodied coffee with a stronger flavor and less aroma.
